Superfood Breakfast Cookies

These superfood breakfast cookies are jam-stuffed with nutritious ingredients and healthy enough for breakfast in a rush! They’re free of gluten, dairy, and refined sugar, and furthermore veggie-lover friendly! School started for us this week, which means it’s been a little insane around here! It’s always difficult to get by and by into a day by day practice after the long and loosening up summer break, and it’s especially hard when school’s at home.

If it’s not adequately hard enough getting a student to stay focused, try including a TV, gaming systems, web, kitchen washroom (yes, nourishment is distracting), and different gizmos and gadgets to the blend.

I’ve been homeschooling for almost 7 years now. My husband and I are school graduates, but the starting was extraordinary because I felt so insufficient. In other words, have you seen that show Are You Smarter than a Fifth Grader? Everything considered, obviously, I’m more inept than a fifth-grader because I scarcely ever knew the answers to those questions! But as clueless as I was, I also realized that no one idea more about my kids than my husband and I. I didn’t really have the foggiest idea how to start or what to do, so I did a huge amount of research on the web. My biggest concern was I didn’t require my kids to fall behind grade level, just in case we anytime expected to return them to open or tuition-based schools. At the outset, we used an assortment of a top-level Christian based instructive program and my husband and I participated to instruct them.

We also administered state tests close to the end of consistently so we could see what areas we were doing honorably in and which required improvement. The last barely any years, they’ve been enrolled in an online charter school, where they have a close-by teacher who assigns them work, grades and tests them. Most of their classes are online presently, aside from a few times a month were they get together with their instructor to go over key lessons top to base.

This has helped them a great arrangement with those classes I’m not particularly good at (ahem, polynomial math and geometry) and furthermore helps me with my least favorite part of homeschooling—investigating and testing! Most importantly, I took in a significant lesson. Sometimes we persuade ourselves not to do things because we don’t accept we’re sufficiently good or it seems excessively hard.

If there’s anything homeschooling has shown me, it’s that you can accomplish anything you set your psyche too. We’re so significantly closer as a family since the kids are home with me consistently. I love our days together, as wild and insane as they are! Since we’re quite busy with work and school, I like having healthy treats arranged for us to mash on for the span of the day. These cookies are hearty, overflowing with wholesome ingredients, and cause a great to get and go breakfast or a hearty snack! They’re also delicious and naturally sweetened enough to suffice for dessert!

Ingredients

  1. 1 cup old fashioned rolled oats (use certified gluten-free oats, if needed)
  2. ½ teaspoon baking powder
  3. ½ cup unsalted pumpkin seeds (pepitas) or other seed/nut**
  4. ¼ cup ground flaxseed
  5. 1 tablespoon chia seeds
  6. ¼ teaspoon salt
  7. 2 tablespoons almond milk or other milk of choice
  8. ½ cup oat flour*
  9. 1 teaspoon cinnamon
  10. 3 tablespoons melted coconut oil or butter
  11. 3 tablespoons coconut nectar/syrup, honey, or other liquid sweetener
  12. ½ cup dried cranberries, raisins, or other dried fruit**
  13. 1 large mashed banana or ½ cup unsweetened applesauce

Instructions

  1. Preheat oven to 325ºF. Combine dry ingredients in a large mixing bowl—oats, oat flour, dried cranberries, pumpkin seeds, ground flaxseed, chia seeds, cinnamon, baking powder, and salt.
  2. Stir in mashed banana, coconut oil, coconut nectar, and almond milk until well blended. Let mixture rest for 4–5 mintutes, giving time for chia and flax to bind everything together. Should look like the dough in the photo above. If your dough has gotten too thick, stir in an additional 1–2 tablespoons milk before scooping out onto your baking sheet.
  3. Measure dough out by the scant ¼ cupful and place on a baking sheet lined with parchment paper (or lightly greased). These cookies don’t spread much while baking, so I like to gently press the dough with the palm of my hand to flatten a bit.
  4. Bake for 15–18 minutes, or until cookies are lightly golden around the edges.
  5. Store leftovers in an airtight container for 2–3 days. Makes 8–9 cookies.
